I don't care if it's hot and humid- when I'm in a soup mood, I'm in a soup mood.
Rotisserie Chicken Misua
* 1 rotisserie chicken
* 1 medium onion, chopped into medium sized pieces
* 2-3 cloves garlic, smashed and chopped
* 2 large carrots, cut into bite sized pieces
* 1 large zucchini, cut lengthwise and sliced ~1/4" thick
* 3-4 baby bok choy, chopped into medium sized pieces
* 2 chicken boullion cubes (optional)
* water
* 1 handful misua noodles
* oil
* salt/pepper
Heat a medium sized pot med-high. Add a turn of oil and add the copped onion, garlic and carrots. Lower the heat and cover, stirring occasionly. Cook until the carrots are tender, and the onion becomes opaque. Remove from pot.
Add the chicken and enough water to cover the carcass to about half. I also heated up the container the chicken came in with some water in the microwave and added it to the pot. Set the heat on medium and cover.
When it has begun to boil, remove the chicken and add the cooked vegetables. Add the sliced zucchini and bok choy. Add boullion cubes, if necessary. Remove the meat from the chicken carcass, and chop into bit sized pieces. Add back to the pot, along with a handful of the misua noodles. (It might look like it's not enough, but trust me, that's all you need.) Set on low and simmer until the noodles are ready. Season to your liking.
