Here is one of the first crook neck squash we harvested from the garden. Not too bad… but what to make with it?
Well, there’s always stir fry. Garlic, squash, and green beans also from the garden. I split the vegetables in two batches, so both M and I could have it (btw, vegetarian stir fry sauce tastes very similar to oyster sauce). Not bad, but the beans were tough.
I also made a couscous dish using squash, carrots, celery, and onion. Sautéed the vegetables, then added the couscous, then the water. Low boil for however long the package said to cook it for and done. It was… not my favorite.
I’ve harvested beans a few times now, and they were always tough. When is the best time to pick them? When they’re still on the smallish side? I was inclined to grab them then, but M kept insisting they weren’t ready. It’s tricky… this growing thing.
