Being Productive

I'm bringing lunch to work today.

Chicken Fried Rice

  • 1 piece baked chicken, shredded (I think I used a thigh)
  • 1 medium onion, chopped
  • 4 garlic cloves, smashed and chopped
  • 3 cups cooked rice
  • Olive oil
  • Seasonings of your choice
Heat up your skillet and add oil (I don't care how much you use... you'll be the one eating it). Add the onions and garlic, and cook on medium low heat until the onions soften. If it starts to develop little brown bits, even better.

Add the shredded chicken (my chicken had skin on and cut that up too. Mmmm... chicken skins) and heat it through.

Add the rice and stir to evenly distribute the chicken/onion/garlic mixture. If you like your fried rice with bits of crispy brown, add a little more oil and turn up the heat. Season. I made this a spicy fried rice with addition of Thai chili paste. Be careful though... I think I may have used a little too much...
