Jerk Chicken Eggroll


Co-worker brought me some food to try, as she does from time to time. Someone she knows had a food truck and invited people over for a meal. They're was seafood, curry turkey, and these eggrolls. She was told it was spicy, so she saved it for me. 

Just a hint of heat, and surprisingly sweet. The veggies weren't overcooked,  as they can be sometimes. I hope she brings more in her next visit.

Lunchables for Grown Ups


At least that's what I call it. Bought this at Sam's Club this weekend. Figured this would be good for those days I don't have time to make lunch.

It's okay. To heavy on the smoke flavor for my tastes. But edible. I wonder if they have other varieties... will there be pizza?!? I have a soft spot for the lunchables version.

Black Bean Burritos

As much as I complain about being meatless, this vegetarian diet hasn’t been too bad. I already prefer my burritos without meat, so why did it take me this long to make them at home? I’m guessing it had something to do with finding the right bean recipe. Even with cooking the beans and making the rice, this was pretty easy to make! Other than the rice and cilantro, all items used were from Trader Joe’s (I hate how much I shop there).

I’ve brought it in for lunch a few times now – I just keep everything in separate containers and put it together just before eating. It’s definitely made a few co-workers jealous.

Black Beans

2 cans black beans (no need to drain)
2 garlic cloves, minced
handful of cilatro stems
salt
pepper

Add all ingredients to a pan and bring to a simmer. Cover and cook for ~20 minutes.

Cilantro Lime Rice

You can use any rice you want, but I used parboil rice because I didn’t want sticky grains and because it would be fluffy. Cook rice according to directions and transfer to a bowl. Add oil (pick a good neutral one so the flavor doesn’t overpower), chopped cilantro, salt, white pepper, and lime juice. Start off with a little lime juice at the beginning and adjust after mixing all the ingredients together.

I was going to go with boring plain tortillas, but these were just calling out to me. Habanero? With a hint of lime? I’m all in.

I really need to watch how they roll burritos next time I’m at Chipotle. But here you go – rice topped with black beans, baby spinach and avocado slices. Sour cream, cheese, salsa is optional, but then you get into that burrito overflow and it’s not pretty.

No, Not a Burger

Recently at work it was make-your-own-burger day in the cafeteria. Usually I’m pretty amped about MYOB, but given the Lenten season I am stuck with the sole option of a gardenburger. Resigned to this reality, I went over and asked for said gardenburger with cheddar and fried onion straws.

“We don’t have gardenburgers today.”

What?!?

“Uh… uh… what am I supposed to get then?” There really weren’t other options – the soup had meat in it and the sandwich du jour was a meaty one.

“Sorry.”

So I ended up looping the islands of the cafeteria a few times. Looking, but not really looking. I grabbed a plate and piled it high with salad greens and toppings. Then I remembered the tuna fish salad. It’s not too bad, but the quality changes from day to day. Took a chance, and grabbed a hard roll.

In the end, it wasn’t too bad. And it was slightly cheaper than had I asked them to make it for me.

Salad, steamed broccoli, and what I'm hoping was some baked chicken. I'm not sure what direction I see my eating habits going in this new year, but I'm guessing it's the healthy route. Or at least striving toward healthier habits.

Perks of the Job



Working across the street this week, and I was bummed because it's supposed to be free food galore at work. But when I took a quick look at the board this morning, I saw scribbled at the bottom "LUNCH TODAY PROVIDED BY ____________"

Free food? Begin happy dance!

I wasn't expecting much. Pizza seems to be the standard when it comes to free hospital lunches - it's cheap and can feed lots of people.

But we got Panera sandwiches, chips, drinks, and from what I heard, some cookies. By the time I got out of my room the selection was rather limited - so I went with the Mediterranean Veggie. Can't say I've ever had it before, but it was actually pretty good. Slightly soggy, and normally I hate soggy sandwiches... but it was paid for so whatevs.

Losing My Cred Series: Buca di Beppo (Colonie, NY)



We food bloggers/over-enthusiasts are guilty of many things, the worst of them being (in my opinion) narrow mindedness. There are those that get so wrapped up into it, they lose sight of reality. 

A blanket generalization? Perhaps. But at least for me,  I'm "keepin' it real."

Yes, I write about food. Not as well as others, but I do write about it enough to keep some people interested. I obviously talk a lot about it since I have become the go-to person of sorts when it comes to food at work. I try my best to support local businesses, (which is evident if you've read any of my posts) but there are times when I am nowhere near these places and I need something convenient. And what is almost always convenient? A chain establishment.

Yes, a chain. McDonalds/Dunkin Donuts/Pizza Hut/Olive Garden/insert any other looked down upon establishment that has invaded your town. Here's the thing - if I'm on the verge on hangry, I have no qualms walking into said places and grabbing a bite. M definitely has no qulams because he's seen my hangry and let me tell you, it it not a pleasant sight. And if I have a coupon or I can get a free meal, we can't get there fast enough. Why? Because I have a coupon... making that overpriced meal not so overpriced. 

And sometimes... sometimes... I just feel like it.

Could I have chosen to spend my hard earned money at a local/happy meat supporting/taking it to "the man" place? Sure. But I was feeling a little narrow minded, Sorry!

Does this mean I have to turn in my foodie badge?  


Now that I got that out of my system, let me tell you about lunch. As we were going over our plans for the morning (estate sales!!), M mentioned the coupon I got from Buca di Beppo was going to be expiring soon and it would be nice of me to take him out for lunch (he's not letting up about my 27 dollar steak, that boy). I was fine with that; it's been a while since we were there last, and I was in the mood for it. We got some stuff for a steal, and made our way over to Wolf Road.

The coupon was ten dollars off a bill of twenty or more. M got the eggplant parm, I got the soup and salad (Tomato Basil and a Cesar salad). Nothing out of the ordinary, but it did hit the spot. After the discount, our meal came out to eleven bucks. Not bad, considering that's about the price for one of their dishes.

Lunch on the Patio



Now that we have the garden just about the way we want it, it's about time we started enjoying it. So we had lunch outside on Saturday, before the skies darkened and delivered some much needed rain.

Lunch was simple - arugula salad, vegetable soup, and rolls we toasted before eating. M had his cooler of beer and I stayed strictly non-alcoholic. You don't see it, but there is a lot of space on that table. Plenty of space for a few more people.

“Oh… you have to go to the new Indian restaurant. It’s a grocery store too, but they have a buffet! Your dad went there and got all this food for 6.99! Go buy lunch there today and get another so you have lunch for tomorrow…”

Simple Salad



Here's a simple, healthy, quick and delicious lunch for all you guys on the go. I just can't get enough of the stuff. Just mix together the following:


  • Washed Spinach
  • Fresh Crumbled Feta
  • Shredded Moliterno
  • Any of your favorite Balsamic Vinigarettes
