I have a very bad habit of complaining about there being nothing to eat in the house. Even if the fridge is full and the pantry is well stocked, it is common to hear this come out of my mouth:
"I am so hungry! There's nothing to eat."
After whining for a little bit more, I went about making lunch. Since purchasing my rice cooker, I have used it to make soup and cake (a very dense cake I might add... a future fruit cake perhaps?), but not rice. I vaguely remembered seeing a recipe using beans rice and coconut milk, but I don't know if it was geared for rice cooker use. Here's the "recipe":
1 can coconut milk
3 cups long grain rice (the cups I'm referring to is for the standard measuring cup that comes with rice cookers)
1 can beans, drained and rinsed
1. Washing the rice isn't necessary. In fact, I forgot about washing rice when I cooked it this afternoon. I don't know if it mattered (it could be the rice I used), but the rice came out fluffy and clump-free.
2. Add the can of cocnut milk and enough water so that it matches the correct water level per cups of rice. I used three cups of rice and after the coconut milk, added enough water so that it would be at the 3 1/2 level on the bowl.
3. Add the rinsed beans and cook. You can throw in hot peppers and seasoning, but I once again forgot to do that.
