M and I didn't stop by the Chopper, so I had to make do with what was in the apartment.
Soba with Vegetable Miso Broth
1 package buckwheat noodles
2 rounded teaspoons concentrated vegetable paste/stock
2 rounded teaspoons red miso paste
pepper for seasoning
1. Cook noodles according to the package. You know how they usually give you a range for cooking time? If I were you, I would aim for the lower time, otherwise you get mushy noodles, like I got. Drain and set aside.
2. Add enough water to dissolve your vegetable paste in. The brand I used requires 8 oz. for every one teaspoon = 16 oz. water for this recipe. Add the vegetable and miso paste. Bring to a boil.
3. Season with pepper. Add other ingredients if you want.
