It's March. It was St. Patrick's Day. And even though I am not Irish, I can't let the month go without making some corned beef and cabbage. And a potato and carrot... but that never makes it in the name. The red headed stepchildren of the dish.
This was incredibly easy and inexpensive to boot. In a crock pot throw in the meat plus the spice packet that comes with it ($2.74), half a head of cabbage ($0.17/lb, total weight 2lbs), pound of carrots ($0.79/2lb bag), and ~2 pounds of red bliss potatoes ($1.69/5lb bag). Enough water to cover the meat and let it cook for four hours. At the end of the cooking time I cooked up the rest of the vegetables on the stove so M could join in.
