Wonder Noodle Fettuccine in Peanut Sauce

a.k.a. Lazy Pad Thai. Can it even be called that? 

Sure. My food, my rules.

Going full steam with the noodle switch. Shirataki is something to get used to, but I don't know if I  could eat it with a tomato sauce. It doesn't seem right. 

Asian foods, no problem. It goes. For this, I sauteed the noodles in beef fat, and doused it in peanut sauce. Sesame, hemp hearts, chili flakes.

Gone in an instant. And yay timing... I've got more noodles coming in tomorrow. Thanks Thrive Market!

Mozzarella Croissant Rolls



Here is a baking fail - wanted to make an easy snack, and what could be easier than prepared dough and string cheese? Two tubes of croissant dough and a bag of mozzarella string cheese later, I had a project.

I originally planned on cutting it into pieces the length of the cheese and roll them up. But this dough would not comply. So I just cut the dough along the perforated lines and tried my best to cover up all the dough. Baked at the listed time on the tube for 20ish minutes. While that was baking I heated up the marinara poured myself a glass of wine. 

I made this for M, but I did have one. Should have brushed the tops with butter and garlic. And I think next time I'll make the dough from scratch.

Chili Garlic Noodles

After making the Chili Pockets, I had half a pound of ground beef that needed to be used. I also had a fridge full of vegetables I bought from the Asian Market the week before. Well, I still do have a fridge full of vegetables, but not as much now. Filipinos make a sweet spaghetti, so what about a spicy one?

Chili Garlic Noodles

1/2 pound ground beef
8 leaves Napa cabbage, rinsed and shredded
2 tablespoons chili garlic sauce (adjust to your heat preference)
lo mein noodles
Sesame seed oil

1. Heat a pan to medium and add oil. You can use a non-stick spray if you want to cut fat. Add the meat and brown. When the meat is no longer pink, add the sauce and cabbage. Stir to combine and cook for a few more minutes before taking it off the heat.

2. Prepare noodles according to package directions. Drain and add to the meat mixture. Toss to combine.

Red Pack Tomatoes and Chili Pockets

Yeah, it’s Super Bowl Sunday and I’m just posting this now. But you don’t need a sporting event to enjoy something that will help take the chill off the winter chill… and isn’t too messy. Sure you can have chili in a nice big bowl and a slice of bread, but why not put them together and save yourself from washing more dishes? Any way to get out of washing dishes is fine by me.

I received a package containing cans of Red Pack tomatoes and other goodies for the kitchen. I’ve written about them before, so let’s get to cooking!

Ice Cold Tofu



Here's the thing with posting pictures from my phone via email - I can send a picture and give the post a title, but I can't put content. So that means having to pull it up on my computer/tablet and working on it... when I get the chance to do so. And lately that has been a trickle.

But comments help. And Jon, thanks to your comment, here's the update.

Not too long ago, tofu was on sale at Chopper. Two for four, something along those lines, so I grabbed a bunch. This is the silken tofu, which I have only seen used for this. You can cut it up to look pretty, or you can be in nom nom mode and just cut it loose from its container and plop it on a plate. A splash of soy sauce, a little dribble of sesame seed oil, and a grind of pepper and you are set. This was M's vegetarian version, to mine I added some minced scallion and a generous helping of bonito flakes. 

Extremely easy to make, and perhaps the perfect snack when the weather is like this.

Go. Try it. You can thank me later.

How to Easily Update Firmware


No-Open Xbox 360 Firmware Updating

 Remove the upper metal sheeting from the top cover. To do this, use a dremel tool and cutting disc to quickly cut away the two melted gobs of plastic holding the sheeting in place. Pull up and remove.


Now all that's needed to do is add a couple SATA wires to the board. Connect a one foot long, 90 degree SATA cable to the board. Attach the Male end of a Male to Female SATA cable to the other end. Connect the Female end to the drive.



 Now all that is needed is a little rerouting of the wires beside the left side of the drive so that the M to F connection is outside the main enclosure, to the front left (where the hard drive will be sitting). Carefully put everything back together and you should have easy access to the Male SATA plug by just popping off the hard drive and the plastic cover.

Four Ingredient Meal–Chicken Penne Pasta with Broccoli and Mushrooms

1 package of boneless chicken breasts, sliced
Broccoli florets (how much you want to use up to you)
King oyster mushrooms, sliced (sub if you want)
1 box penne pasta
Olive oil
Salt/Pepper
Parmesan cheese

  1. Boil pasta according to directions on box.
  2. While the pasta is cooking, heat a pan on medium heat and add enough olive oil to  to coat the bottom. Add chicken and cook until it no longer looks raw. Cook a little longer so that the chicken starts to lightly brown. Remove from pan.
  3. Add a little more olive oil and throw in the broccoli. Cook. When the broccoli starts to become a brighter green, add the mushrooms and toss. Cook for a few minutes. Add the chicken, and cook long enough to warm up the meat.
  4. Drain the pasta and add to the pot and toss. Season with salt and pepper, and a generous portion of cheese. Combine all the ingredients. Re-season as necessary.

Viennese Cucumber Salad

For challenge #2 in Project Food Blog, I made schnitzel with plenty of sides. Here is one that I had planned to make, but I simply ran out of time. Not that it takes much time, I just had my hands full. I whipped this up after I submitted that entry and have made it a few more times since.
