Back to school! It's been three days in, and I'm already missing the summer. Jokes! Seriously, I'm glad it's started up once again, even after a rough first day. Now I'm trying to get back into routine, whether it be studying or exercising or cooking. The last two days I've ended up ordering out, but tonight I need to get back into the kitchen.
It was rainy today, thanks to the remnants of Katrina. I needed something to warm me up, and I decided to do a little "mix-mix." I went through my pantry and whipped up a good pick me up. This would be great for a stay in, movie night meal as well.
Pantry Raid Soup
Serves approx. 6
1 14.5oz can chicken broth
1 32oz container vegetable/beef broth
3 large bunches of scallions
1 bag frozen green beans
1 bag frozen carrots
1 bag frozen corn
1 envelope chicken noodle soup (ex. Lipton's)
2 14.5oz can stewed tomatoes (or whole tomatoes/crushed/etc.)
Salt, pepper
Chop up scallions and throw into pot (you want to use a big pot, soup pot or a pasta pot). Throw in frozen vegetables and tomatoes. Add enough water to almost cover the vegetables. Add broth and noodle soup mix. Heat to boiling and allow to boil for 20 minutes, followed by another 20 minutes to simmer. Season with salt and pepper.
If you like, top with grated cheddar cheese. Or even better, have with a fancy grilled cheese sandwich. I personally had the soup with my sparkling wine infused watermelon.
